Method: Chop up your peppers and seasonings. Heat your sesame oil on a hot pan and fry your peppers and ginger for 2 minutes. Add in your garlic, tomato paste, soy sauce, and rice wine, and let it cook for 2 minutes. Finally add in your chili pepper, salt, and pepper to taste.


3. Stuffed Tomatoes with Chorizo


Ingredients: 2 tomatoes, ¼ cup of crumbled chorizo, ¼ cup of goat cheese, 1 avocado, 1 yellow onion, 2 Tbsp of fresh basil, olive oil, salt, and pepper


Method: Take two tomatoes and cut them in half. Season them with olive oil, salt, and pepper. Chop up your avocado, onion, basil, and seasonings. Fill up your tomatoes with these ingredients and put them back in the oven at 350°F for 15 minutes.


4. Eggplant and Corn Medley


Ingredients: 2 eggplants, 1 sweet bell pepper, 2 Tbsp of olive oil, salt, and pepper


Method: Season your vegetables with olive oil, salt, and pepper. Slice your eggplants and bell peppers. Cook them on a pan on medium heat for 2 minutes. Add your seasonings and let it cook for another 5 minutes.
